It's been a while since I made a home cook meal. March started off as a very busty month for me and I knew it would be wise to find quick and easy meals to cook at least once a week. Quick and easy meals like this are my go-to.
I had no idea what I wanted to make nor did I have a taste for anything special but I remembered I had a new sauce to try. Influenster was kind enough to send me the P.F. Changs Home Menu Teriyaki Sauce. P.F. Changs has five sauces from their Home Menu line: Mongolian Style BBQ, Kung Pao, Sesame, Teriyaki, and Soy. Initially, I was skeptical to try it because I don't care for their frozen entrees and appetizers. In my opinion, they are nothing like the restaurant, but this was right on time! I went to the P.F. Changs website to grab some recipe ideas and found out that there are a plethora of recipes to choose from. I kept it simple and went with the Teriyaki Stir Fry recipe.
The recipe was very simple to follow. It does call for marinating the chicken but instead of doing it overnight I just prepped my chicken in the morning before work so it would be ready to cook when I got off. It took about 30 minutes to cook, including prep time (sans the marinating) and you don't need a million ingredients either. Just chicken, veggies, and sauce. Quick and easy!

Things I Did Differently:
I like my chicken flavorful so I seasoned with salt and pepper in addition to the teriyaki sauce, ginger, and garlic. It added just enough flavor and it wasn't overpowering. I'm not a fan of saucy meals (I always ask for my sauce on the side) so I skipped the additional 1/4 cup of sauce per the recipe. I also added vegetable stir fry because what's a meal without some greens right? I added a little bit of sauce to my veggies as well. Lastly, I made basmati rice to accompany the chicken and veggies. I don't usually eat rice but I wanted it to be a complete meal for those I was sharing with.
Things to Try Next Time:
I'll definitely add more sauce to my chicken after it is cooked for just a bit more flavor. I also want to try it with shrimp next time and possibly a different vegetable mix. I'm steering clear of rice for now so it will just be meat and veggies for me.
If you're Vegan try this sauce with tofu or chik'n. Vegetarian? Try it with just veggies or a salad.

Mongolian BBQ Glazed Meatballs (I'd use ground chicken or turkey.)
Kung Pao Asian Street Tacos (I'd use chicken or shrimp instead of pork.)
